1.) Breakfast to include

  • Eggs, potatoes, bacon, sausage
  • Assorted fruit bowl (oranges, apples, bananas, strawberries)

  • Bread (wheat, white bagels, sweet rolls)

Keep in mind we have vegetarians on the crew

  • Breakfast service to include: paper plates & bowls (china is nice but not necessary for breakfast), flatware (metal) and napkins
  • One local newspaper, one USA Today in the dining room
  • Beverage Service Beverages should be available to the crew and band all day and should constantly restocked, to include coffee and tea service, soft drinks, bottled water. Coffee to be available for the Load out (Important.)

2.) Lunch

  • Time: TBA (usually 12:00 or 1:00pm) please check with promoter
  • Number of people: 20 Artist crew (local crew is extra check with promoters)
  • Hot vegetable soup and or chili with crackers
  • Deli meats and cheeses with garnish (lettuce, sliced tomatoes, onions, pickles, sprouts, etc.)
  • Tuna fish (packed in water variety), egg salad, condiments to include mayonnaise, Dijon mustard, butter, cream cheese spread, peanut butter, jelly, etc.
  • Breads (white, wheat, grains, bagels)
  • Beverage service (WE DO WELCOME ALTERNATIVES TO DELI TRAYS)

3.) Dinner

  • Dinner Time: TBA (Usually between the hours of 5:30 and 6:00pm) check with promoter
  • Number of people: Artist crew and Band & Sponsorship reps is 50 people plus there is always a chance a few drop ins as you probably know from experience. Local crew and promoter staff is extra. Check with promoter.
  • Please be prepared to fix a few (3 to 6) vegetarian and or vegan meals (these meals will have no meat or meat stock, fish and dairy products) pasta is always a safe bet with rice or flower noodles, olive oil, garlic, fresh vegetables (stir fry) mushrooms, pesto.
  • Suggestions: If meat is prepared as steak please have an alternate such as fish or chicken (boneless, baked, broiled)
  • Pasta entrees (with meat sauce and without meat sauce, marinara, pesto, cream sauces Side dishes two or more of the following: steamed rice (with soy or curry) mixed vegetables (steamed) potatoes (baked or mashed) with condiments pasta as a side dish (sauces on the side)
  • Salads fresh, with choice of dressings (three to include oil & vinegar) Lettuce, romaine, spinach, tomatoes, mushrooms, cucumber, onion, etc.
  • DESSERT: SURPRISE US!!!!!!!!!
  • Dinner should be served with dinner rolls, and or bread, butter, salt, pepper, meat sauces, ketchup, etc.
  • Beverages to be included with the dinner meal and until load out is complete.

There will be 3 hot meals (one vegetarian/vegan) needed for the band after show. Check with the tour manager for details.

4.)Dressing Room

  • Catering: ArtistsÕ dressing room shall be set before Artist arrives. Please check with the production manager for proper time.

  • Coffee and Tea service set up in the dressing room. Tea should be an herbal variety and specifically Throat Coat tea (brand name) if possible with condiments, and real coffee cups no paper or Styrofoam please.

The more comfortable the bands dressing room is the happier they will be. All efforts made in this area are greatly appreciated by our production.

5.) Stage and FOH Drinks:

  • _ hour prior to Artists performance please provide two coolers with the following drinks for the stage left and stage rights of the stage. Artists Production Manager will show you the exact location for the drinks on ice and with 24 (16 oz) cups for each cooler.
  • Each cooler to include: 10 Bottles of Evian 6 Assorted Sodas (Sprite, Coke, Caffeine Free Diet Coke) FOH, ONE COOLER WITH THE SAME DRINKS AS ABOVE TO BE DELIVERED TO THE FRONT OF HOUSE MIX
  • Bus and Truck Food: after Show Artists buses will need to be restocked with the following items for the drive after the show. 1 case of soda (Coke, Sprite, Diet Caffeine Free Coke) 1 Case of Evian water 40 lbs. Of ice
  • Bus food will be determined day of show (ask production mgr) This will usually be pizza, hot wings, local favorite or Chinese, Thai.
  • The number of buses will vary from 3 to 4. Sometimes there is no need for any of this food or drink so please check with the production manager. Each truck driver will need a bottle of Evian each, one sandwich each, or small pizza, 4 sodas, and fresh brewed coffee.

  • 1 large bag each of Ruffles potato chips and tortilla chips
  • 2 Jumbo bags peanut M&M's (PEANUT! Not plain, browns are OK)
  • 1 Large box each: Clusters, Raisin Bran and Special K
  • 2 quarts whole milk (chilled)
  • 2 Quarts of Eden Soy Milk
  • 1 Quart of Tropicana fresh orange juice
  • 3 cases of quality water, preferably Poland Spring (NO EVIAN)
  • 1 Six pack each of Pepsi, Root Beer & Mountain Dew 12 Snapple's (Ice Tea, Pink Lemonade, Orangeade)

Aftershow Food- For the tour bus after the show

Widespread Panic

Here is what tour would like to see in menu planning. Hot breakfast at 8:30 AM til 10:30 AM for 22 people: eggs, bacon, hash browns/grits/potatoes, chef special, hot and cold cereals, assorted bagels, breads, jellies, toaster, doughnuts etc. combined with a good supply of juices, milks, and tea will lead to a great start in the morning.

Hot Lunch 12:00-2:00 for 22 people will feature either a hot sandwich or casserole along with a hot soup, limited deli and cheese platter, assorted breads and salads with low fat dressings including blue cheese, and various desserts but NEVER pecan pie.

Dinner at 5:30-8:30PM for 27 people should feature:

  • Entree one- chicken, beef, pork or fish.
  • Entree two- chicken, beef, pork, or fish.
  • Entree three vegetarian with two to three sides; one starch and the other two fresh vegetables of your choice.

Like lunch, dinner should have assorted breads and salads with low fat dressings including blue cheese and various desserts, but NEVER pecan pie.

Requirements- Recycling bins and plenty of ashtrays and visible ashtrays

A special request from out tour is an endless supply of iced tea and lemonade. We would like to see lemonade in the dining room. We ask that the tea be sweet and made from this recipe.

Recipe: Widespread Panic Sweet Tea For 22

To make a six gallon container take two gallons of water and bring to a boil. Add 30 Lipton family size tea bags and turn off heat. Let stand 10 minutes. Take bags out and add juice of six lemons and add 10 cups of suger. Slowly fill remaining 4 gallons of water while constantly stirring. The Sweet Tea should always be in the dining room and a gallon or so in the bands dressing room.
